Little Bites of Heaven

No, really.

A couple of months ago, Brian and I were invited to attend the wedding of fellow Weddingbee blogger and all around wonderful lady, Mrs. Fox (you should really check out the recaps of her beautiful wedding).

These mason jars with sparkly teal hearts and striped straws were one of my favorite details from her wedding!

Mrs. Fox had some amazing food at her wedding, but my absolute favorite thing were an appetizer I failed to get a picture of.  They were goat cheese balls covered in candied nuts and topped with honey.  These little balls have haunted my memory (in a good way) and I've been looking for an excuse to try and recreate them myself.  Enter anniversary dinner and a perfect excuse. 

Now, I'm going to share them with you.  I insist you try them.  You can thank me later. 


You start with your goat cheese.  You want the goat cheese that comes in a log, the really white stuff, not the goat cheese that that comes in a circle with a thick rind.  The proper goat cheese will be a little moist for the nuts to stick to it, which is on the top of this picture.  The stuff on the bottom, which is yellower, is also goat cheese but tastes like brie and won't work for this recipe.

Next, get some candied nuts.  You can buy some already coated, or you can make some yourself.  I opted to make some because I didn't find the pre-caoted version until after I already put the ingredients to make my own in my basket and was too lazy to put it all back.    

Brian's mom gave me a great recipe for candied nuts, which made way more than I needed, but are so tasty Brian and I had no problem eating them up.


Get out your frustrations by coping them up into little pieces.  You want small pieces, but not so small that you can no longer taste the sugar.


Cover your goat cheese with your nut pieces.



Once you have them all covered, marvel at their beauty and refrigerate them until you are ready to serve them (or eat them as dinner, whatever the case may be).



Finally, cover them with your favorite honey.  We have four different honeys (three of them are leftover from our wedding), so we taste tested all four.  From the top we used:  Savannah Bee (SB) winter white, SB Tupelo, SB orange blossom, and clover honey.


Find the perfect wine pairing and enjoy your masterpiece!   Our favorite was the Savannah Bee orange blossom, but they are all delicious.


Seriously, go make some of these now.  You will not regret it.

  2. Yum! I loooove goat cheese, so I'll have to give these a try. Also, I've found some honey-flavored goat cheese in the past which would eliminate the need for (messy) dipping honey!

  5. I am totally geeking out that you and Fox are "real life" friends. Over the freaking moon about it.

    Goat cheese makes me shudder but now I'm thinking about substitutes because the honey and candied nuts combo sounds awesome.
